The Olivetan monks dedicated themselves to agricultural activity as a direct source of livelihood since their origins, including the cultivation of vines and the production of wine.
Direct evidence of this is the historic cellar of the Abbey, which dates back to the first half of the 1300s. Its "exposed" brick construction, in the basement of the monastery, can now be easily visited.
The rooms that host it are divided into two parts: the vat room for the vinification of the grapes and the room for the refinement and conservation of the wine where the ancient barrels made on site are located.
The space occupied by the vat room and the cellar, the number and size of the vats and barrels, testify to how the Abbey, in addition to providing for the sustenance of the convent, was also a point of reference and collection for the grapes produced by the farmers in the area.
Today, a visit to him, in addition to allowing us to taste and purchase local, quality wine products, gives us access to environments that reserve surprises for the eyes and sense of smell.
